“The Power Fairy”
Deep in the woods beside a little farm, live the Forest Fairies. They are subtle creatures: mild yet earthy, delicate yet woodsy, with smooth, velvety wings, and extremely good taste. This mycological miracle, with its pretty pink wings, is known as The Power Fairy - though it may look delicate, it’s actually meaty and robust, and can really take the heat!
Our family loves to use these almost like a meat substitute, first sauteing them to soften and draw out their flavour, then utilising them as a pizza topping or in faux-lobster macaroni and cheese. These beauties also stand up to longer cooking times, and therefore make a great addition to soups, sauces, stews, and risottos, as well as quiches and frittatas! Store them in a paper bag in your fridge for up to a week.
