a.k.a. Forest Nameko, Brick Tops
“The Nature Lover”
With a light, woodsy aroma, The Nature Lover truly exemplifies the essence of the forest. Hardy and capable of getting the job done, it maintains its rich, nutty taste even after a long day in the saucepan! It can be a little reserved, and really benefits from spending time with a dish as it cooks in order to draw out its earthy flavour, rich colour, and natural tenderness.
Our family loves to simmer these for longer periods in any dish that has a liquid base. Whether in soups, sauces, stews, or risottos; after time the caps appear to melt, releasing intense flavour and colour. They are also wonderful sauteed, roasted, or grilled to a deep brown colour, and retain more of a crispy texture when left whole. Store them in a paper bag in your fridge for up to five days.
